Southern Girl in a Midwestern World

Hi! I’m a pediatric speech-language pathologist by day and a cooking/baking fanatic by night. I live in Cincinnati, Ohio, but grew up in Texas — and those who know me well know I am a Southern girl at my core.

I grew up in the kitchen surrounded by my mom and sisters, so cooking has always been a major part of my life. Of course, living in the South, I was primarily raised on meat, butter, and sugar.

It’s a delicious life, but as I got older, I realized it just wasn’t working for me anymore. I slowly made changes toward being vegan and now happily call myself “vegan-ish.”

I’m passionate about:
  • Preventing health issues instead of treating them
  • Creating a sustainable lifestyle
  • Acroyoga (look it up, it’s a fabulous hobby!)
  • All. Things. Summer.
Do you have to be vegan to enjoy the meals I create? 

Definitely not! 

I hope you take the time to try plant-based meals with an open mind and expose yourself to flavors and foods you might never have tried before. There’s a whole world of food out there that’s just waiting to be devoured!

My recipes will always be things that my husband (who is vegan-ish by default, because he eats what I cook) and I eat at home. They’ll be full of flavor, easy to make, and usually a little spicy – can’t get rid of those Texas roots.

Midwestern Girl in a Southern World

Howdy, y’all (I guess?) — I’m Nicole, a full-time freelance writer living in Memphis, Tennessee. I grew up in the Chicago suburbs, though, and always have a bit too much attitude to blend into my MUCH politer surroundings these days.

I’m passionate about:
  • Writing until the world makes sense, whether it be about books, personal finance, or business
  • Playing disc golf with my husband, hiking with my dog, and running marathons with friends
  • Making the perfect cup of coffee

Many things about the south are still a mystery to me, and I’m shocked at the lack of deep dish pizza. But I’ve also come to appreciate the truly AMAZING food here. From soul food, to Cajun food, to Mexican food… the list is endless. Southerners know how to cook!

But as an aspiring vegan, I love turning the delicious foods I find here into healthier versions. And thankfully, I’ve got a sister-in-law who’s an expert!

What’s my job here?

Unlike me, Elana grew up in the kitchen and is an absolute pro there. She can tweak or create a recipe at the drop of a hat — and make anything she cooks look easy.

If it’s Elana’s job to create scrumptious plant-based recipes with a home-cooking flair, it’s my job to be the resident newbie. I’ll be alongside you, trying the recipes for myself and learning how to make (healthy) cooking a more effortless part of my life.
