Baked Peaches with Fall Spices

A Perfect Melt-in-Your-Mouth Dessert for the End of Summer!

Ingredients
  

  • 2 peaches
  • 3 Tablespoons coconut oil melted
  • 3 Tablespoons maple syrup
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • Pinch of salt

Instructions
 

  • Preheat oven to 375 degrees.
  • Halve and pit peaches, then place into a deep dish flat side up (I used a loaf pan).
  • Mix coconut oil (3 Tbsp), maple syrup (3 Tbsp), cinnamon (2 tsps), , vanilla (1 tsp), ground cloves (1/2 tsp), nutmeg (1/4 tsp), and salt (pinch) in a small dish.
  • Pour the oil/spices/syrup mixture over the peaches, allowing the extra liquid to spill over to the bottom of the dish.
  • Bake for 25-30 minutes -- until peaches are warm, fragrant, and slightly soft.
  • Serve warm with an extra drizzle of maple syrup, vegan vanilla ice cream, or completely by themselves!
  • Best when fresh, but will keep in the refrigerator in a sealed container for 2-3 days. Recommend reheating once cold for best results.

Notes

If you're serving them by themselves, I highly recommend scooping the extra spice/oil mixture out of the bottom of the dish and spooning it back over the top of the peaches to get the most of all that flavor goodness.
