Hearty Roasted Winter Vegetables

This quick and easy side dish is a colorful way to add veggies to your dinner table!

Ingredients
  

  • 2 large sweet potatoes sliced
  • 2 parsnips chopped
  • 2 carrots chopped
  • 1 red onion cut into strips
  • 1/2 pound brussel sprouts cut in half
  • 3 cloves of garlic minced
  • 2 Tablespoons olive oil
  • 1/2 teaspoon sea salt
  • 1 teaspoon crushed red pepper flakes

Instructions
 

  • Preheat oven to 400 degrees Fahrenheit.
  • Place chopped vegetables on a lined baking sheet.
  • Drizzle olive oil (2 Tblsp) over vegetables and toss with sea salt (1/2 tsp) and crushed red pepper flakes (1tsp).
  • Cook for 10-12 minutes then stir and return to the oven. Cook for additional 10-13 minutes, until vegetables are slightly browned and tender.
  • Serve immediately with your favorite main dish!
  • Best when fresh, but stores in the refrigerator for 2-3 days in an airtight container.
