Hearty Roasted Winter Vegetables
This quick and easy side dish is a colorful way to add veggies to your dinner table!

- 2 large sweet potatoes sliced
- 2 parsnips chopped
- 2 carrots chopped
- 1 red onion cut into strips
- 1/2 pound brussel sprouts cut in half
- 3 cloves of garlic minced
- 2 Tablespoons olive oil
- 1/2 teaspoon sea salt
- 1 teaspoon crushed red pepper flakes
Preheat oven to 400 degrees Fahrenheit.
Place chopped vegetables on a lined baking sheet.
Drizzle olive oil (2 Tblsp) over vegetables and toss with sea salt (1/2 tsp) and crushed red pepper flakes (1tsp).
Cook for 10-12 minutes then stir and return to the oven. Cook for additional 10-13 minutes, until vegetables are slightly browned and tender.
Serve immediately with your favorite main dish!
Best when fresh, but stores in the refrigerator for 2-3 days in an airtight container.
