Method
- Place chopped ginger and water in a medium sauce-pan over high heat.
- Bring to a boil, then reduce to a simmer.
- Simmer uncovered for at least 10 minutes.
- Add lemon juice, then strain into your favorite mug.
- Allow to cool for ~5 minutes.
- Add honey and enjoy!!
Notes
*I found squeezing 1/2 of a lemon was too much, but 1/4 of a lemon was too little for my taste buds. This is totally dependent on how much lemon juice YOU like, so start with a little and keep tasting and adding until you have the flavor you want!
**If vegan, use maple syrup or agave for sweetener.
