Method
- Mix grape tomatoes (1/2c), basil (1-2tsp), olive oil (1tsp), and balsamic vinegar (1/2-1tsp) in a medium-sized bowl. Stir until just combined.
- Pour onto toast and sprinkle salt on top.
- Serve immediately with avocado slices, tofu scramble, and/or breakfast potatoes.
- Tomatoes will keep in refrigerator for 1-2 days in airtight container, although best when fresh.
