Tomato Basil Toast

This easy savory breakfast recipe is the perfect choice for a rushed morning or a lazy Saturday. Serve with sliced avocados, tofu scramble, and/or breakfast potatoes!

Ingredients
  

  • 1/2 cup grape tomatoes sliced in half
  • 1-2 teaspoons basil chopped
  • 1 teaspoon olive oil
  • 1/2-1 teaspoon balsamic vinegar
  • dash of coarse sea salt
  • 1 piece of bread toasted

Instructions
 

  • Mix grape tomatoes (1/2c), basil (1-2tsp), olive oil (1tsp), and balsamic vinegar (1/2-1tsp) in a medium-sized bowl. Stir until just combined.
  • Pour onto toast and sprinkle salt on top.
  • Serve immediately with avocado slices, tofu scramble, and/or breakfast potatoes.
  • Tomatoes will keep in refrigerator for 1-2 days in airtight container, although best when fresh.
