Tomato Basil Toast
This easy savory breakfast recipe is the perfect choice for a rushed morning or a lazy Saturday. Serve with sliced avocados, tofu scramble, and/or breakfast potatoes!

- 1/2 cup grape tomatoes sliced in half
- 1-2 teaspoons basil chopped
- 1 teaspoon olive oil
- 1/2-1 teaspoon balsamic vinegar
- dash of coarse sea salt
- 1 piece of bread toasted
Mix grape tomatoes (1/2c), basil (1-2tsp), olive oil (1tsp), and balsamic vinegar (1/2-1tsp) in a medium-sized bowl. Stir until just combined.
Pour onto toast and sprinkle salt on top.
Serve immediately with avocado slices, tofu scramble, and/or breakfast potatoes.
Tomatoes will keep in refrigerator for 1-2 days in airtight container, although best when fresh.
