Vegan Molasses Sugar Cookies

Ingredients
  

  • 1/4 cup applesauce
  • 2 Tablespoons coconut oil room temperature
  • 3/4 cup coconut sugar OR cane sugar*
  • 1/4 cup molasses
  • 1 flax egg**
  • 1 teaspoon baking soda
  • 1/2 teaspoon cloves
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • pinch of salt
  • 1 1/2 cups whole wheat flour
  • 1/4 cup cane sugar (or additional coconut sugar)

Method
 

  1. In a large bowl, beat applesauce (1/4c), coconut oil (2Tblsp), coconut sugar (3/4c), molasses (1/4c), and flax egg (1) until well combined.
  2. Add baking soda (1tsp), cloves (1/2tsp), cinnamon (1/2tsp), ginger (1/2 tsp), and salt (pinch) and mix well.
  3. Then add flour (1.5c) half cup at a time and mix until well combined.
  4. Chill dough for 30 minutes in the refrigerator.
  5. Once dough is chilled, preheat oven to 350 degrees Fahrenheit.
  6. Using your hands, roll ~1 Tablespoon of dough into a ball, roll in sugar, and place on greased cookie sheet. Continue with remainder of dough.
  7. Bake cookies for 8-10 minutes, until golden brown.
  8. Let cool and enjoy!
  9. Store in air-tight container at room temperature. Keeps for 3-4 days.

Notes

Notes: Put a small amount of melted coconut oil on your hands to keep the dough from sticking to your hands.
*You can use cane sugar or coconut sugar to roll the cookies in. I used cane sugar because the cookies are prettier, but tried both and either one works well!
