Method
- In a large bowl, beat applesauce (1/4c), coconut oil (2Tblsp), coconut sugar (3/4c), molasses (1/4c), and flax egg (1) until well combined.
- Add baking soda (1tsp), cloves (1/2tsp), cinnamon (1/2tsp), ginger (1/2 tsp), and salt (pinch) and mix well.
- Then add flour (1.5c) half cup at a time and mix until well combined.
- Chill dough for 30 minutes in the refrigerator.
- Once dough is chilled, preheat oven to 350 degrees Fahrenheit.
- Using your hands, roll ~1 Tablespoon of dough into a ball, roll in sugar, and place on greased cookie sheet. Continue with remainder of dough.
- Bake cookies for 8-10 minutes, until golden brown.
- Let cool and enjoy!
- Store in air-tight container at room temperature. Keeps for 3-4 days.
Notes
Notes: Put a small amount of melted coconut oil on your hands to keep the dough from sticking to your hands.
*You can use cane sugar or coconut sugar to roll the cookies in. I used cane sugar because the cookies are prettier, but tried both and either one works well!
