In a large bowl, beat applesauce (1/4c), coconut oil (2Tblsp), coconut sugar (3/4c), molasses (1/4c), and flax egg (1) until well combined.
Add baking soda (1tsp), cloves (1/2tsp), cinnamon (1/2tsp), ginger (1/2 tsp), and salt (pinch) and mix well.
Then add flour (1.5c) half cup at a time and mix until well combined.
Chill dough for 30 minutes in the refrigerator.
Once dough is chilled, preheat oven to 350 degrees Fahrenheit.
Using your hands, roll ~1 Tablespoon of dough into a ball, roll in sugar, and place on greased cookie sheet. Continue with remainder of dough.
Bake cookies for 8-10 minutes, until golden brown.
Let cool and enjoy!
Store in air-tight container at room temperature. Keeps for 3-4 days.
