Candied walnuts
With cooler weather (finally) arriving, I’m doing everything I can to embrace the cozy vibes. For me, candied walnuts are perfect for this! They’re sweet, crunchy, and spiced to bring the layer of warmth I need during fall and winter. And they also make my apartment smell like a fall paradise, which is great, since I’m not leaving my house until the temps are back to 75°F or higher (you can take the girl out of Texas, etc.).
The best candied walnuts have fall spices
I used a lot of the traditional fall spices for this recipe, but cardamom is the star of the show. It’s become a favorite of mine to use in fall recipes because it adds extra depth to the flavor. It is native to India and is also used in many Middle Eastern and Arabic foods. The taste is warm, savory, and sweet all at once.
Cardamom is also thought to have some health benefits. Studies suggest that it could help with metabolic syndromes such as obesity, high cholesterol, hypertension, and high blood sugar. It may also improve oral health by disrupting the bacteria in your mouth and giving you fresher breath.

Ready for your kitchen to smell glorious?
These candied walnuts are so simple and truly come together in 10 minutes. I mix all the ingredients on my sheet pan to avoid extra dishes (who wants extra dishes?? not me!) and then throw the walnuts in the oven. The most important part is not to overcook them. Keep a close eye, and once the spiced nuts start changing color, remove them from the oven. They’ll brown just a little more on the sheet pan. As soon as they’re cool, they’re ready to enjoy!
Candied walnuts
Ingredients
- 2 cups walnuts roughly chopped
- 2 Tablespoons maple syrup
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cloves
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- Mix all ingredients on a baking sheet.
- Bake walnuts for 5-10 minutes. Watch closely and take out when they start to darken.
- Let cool.
- Store in airtight container in a cool place.
- Add to salads, oatmeal, or enjoy handfuls!
