Baked Peaches: A Perfect Melt-in-Your-Mouth Dessert for the End of Summer

One of my favorite things about the summer is that there’s so much fresh produce to be found everywhere. 

A few weeks ago, my local farmer’s market had fresh peaches — and of course, I had no choice but to buy at least ten. Fast forward a couple of days, and this baked peaches recipe was born out of necessity as a way to use them up. It’s since become an absolute favorite at my house!

As a dessert, fresh fruit is a real winner in my book: it’s naturally sweet (but not too sweet) and delicious, but still healthy! When fruit is the main ingredient in your recipe, you can add a bit of oil and sugar and still have a decently healthy dessert on your hands.

These baked peaches are made with coconut oil, maple syrup, and all the fall spices. The coconut oil makes them taste *almost* buttery (I know, I know… coming from the South, I’m well aware there’s no real replacement for butter), and the spices give it a warm and comforting flavor. Warming the peaches allows the flavors to meld, and it also gives them the perfect melt-in-your-mouth sensation. 

My favorite thing about this recipe, though, is that it’s done in 35 minutes — and only 5 minutes of that is prep time (and that’s a legitimate 5 minutes, not a professional chef’s 5 minutes)!

If you’re not vegan, you could substitute honey for maple syrup, and of course, I would always encourage you to play around with the spices. Add less or more of the cinnamon or nutmeg if you prefer one of those flavors. And you may decide you need to add more maple syrup. Feel free to play around with how much works for you!

I do highly recommend scooping the spice/oil/maple syrup mixture out of the bottom of the pan after cooking and re-spooning it over the peaches once they’re on a plate. You can also drizzle a tad more maple syrup on top once plated to make them slightly sweeter. 

These peaches are quick, comforting, and perfect for these end-of-summer nights we’re currently having up here in Ohio.

Baked Peaches with Fall Spices

A Perfect Melt-in-Your-Mouth Dessert for the End of Summer!

Ingredients
  

  • 2 peaches
  • 3 Tablespoons coconut oil melted
  • 3 Tablespoons maple syrup
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • Pinch of salt

Instructions
 

  • Preheat oven to 375 degrees.
  • Halve and pit peaches, then place into a deep dish flat side up (I used a loaf pan).
  • Mix coconut oil (3 Tbsp), maple syrup (3 Tbsp), cinnamon (2 tsps), , vanilla (1 tsp), ground cloves (1/2 tsp), nutmeg (1/4 tsp), and salt (pinch) in a small dish.
  • Pour the oil/spices/syrup mixture over the peaches, allowing the extra liquid to spill over to the bottom of the dish.
  • Bake for 25-30 minutes — until peaches are warm, fragrant, and slightly soft.
  • Serve warm with an extra drizzle of maple syrup, vegan vanilla ice cream, or completely by themselves!
  • Best when fresh, but will keep in the refrigerator in a sealed container for 2-3 days. Recommend reheating once cold for best results.

Notes

If you’re serving them by themselves, I highly recommend scooping the extra spice/oil mixture out of the bottom of the dish and spooning it back over the top of the peaches to get the most of all that flavor goodness.
